Large, robust, and malleable, banana leaves have long been an essential component of many traditional Indian dishes and cooking techniques, particularly in the southern parts of the country.
In his most recent reel, Krish Ashok discusses the "science" of employing banana leaves. If you just eat meals on top of a banana leaf, you won't be getting much of its incredibly aromatic and healthful polyhenols. You have to steam food inside the banana leaf in order to acquire those, he says.
