Celebrate with a cold, creamy dish of VanillaPuddingDay. The puddings we eat as desserts today are different from the ones served in ancient times. Most medieval puddings were made with meat and seasoned with herbs and spices. Even sweetened ones were usually served hot. By the end of the 18th century, people made puddings from grains or old bread with nuts, fruit, or meats. They used these puddings to make meals go further for large families.
The creamy pudding we know today is similar to custard but without eggs. Necessity leads to invention, especially when chemists are involved. For Alfred Bird, whose wife was allergic to eggs, this was very true. In 1837, Bird invented an egg-free custard powder using flavored cornstarch.
My-T-Fine produced the first packaged pudding in the United States in 1918. These puddings still needed to be cooked on the stove. The instant version was introduced in the mid-1940s. Pudding can be enjoyed in various flavors, either alone or as part of a larger recipe.
