A popular Bengali meal made with mixed vegetables is called shukto. It is typically served with rice at the beginning of a traditional Bengali dinner.
Bengali food is renowned for its profusion of dishes, particularly desserts. Bengali food usually consists of rice, dal, and a bowl of either mutton or fish curry. There's a startling twist, though. Bengalis eat at least one tento (bitter) dish prior to the main course. "Shukto," a combination of veggies and an acrid soup, is one such unpleasant treat. In order to prepare the palate for the main dish, shukto is served first.
This recipe calls for staples such drumsticks (shojne danta), bitter gourd (ucche), and sun-dried lentil dumplings (bori), which can optionally be garnished with radhuni (wild celery). In order to give the gravy a creamy texture, milk and ghee are also added.
